Support BYO Vnet in configure-values.sh

Hi, it would be nice to support retrieving VNET info in BYO VNet scenario when running the configure-values.sh script. I can do the change but I am not sure about how to open the PR (it's my first time contributing to a repo I do not own)

Generate the karpenter-values.yaml for a cluster deployed in BYO Vnet scenario

I am manually retrieving VNET info
