Leverage Pester's CodeCoverage parameter to generate report of code coverage (use Jacoco as format for Azure pipelines), and then publish the report in the test results.
-Azure Pipelines has code coverage publish steps. https://docs.microsoft.com/en-us/azure/devops/pipelines/tasks/test/publish-code-coverage-results?view=azure-devops
Perhaps have a threshold that causes the build to fail, to ensure test coverage.
